Being at university is the first time that lots of students will have to be cooking for themselves regularly. This might seem daunting, but there lots of meals that are quick, cheap and easy to make and will stop you living off ready meals and takeaways. In this post I’m going to share a few of my favourite easy meals.
Stir Fry – Quick and easy to make, just throw a few vegetables and a bit of chicken in a pan, add some sauce and have with rice or noodle. The main beauty though is how easy it is to customise – You can put pretty much any vegetables in, so it’s good for using up whatever you’ve got left in the fridge.
Pasta – The stereotypical student classic, but I can see why. It’s quick to make and very versatile, you can have it with a whole range of sauces, a bit of pesto or just covered in loads of cheese. I find it’s always good to have some pasta in the cupboard so I’ve got something filling to cook if I’m ever in a hurry.
Chilli con carne – A favourite of mine that’s fairly easy to make and tastes great. It’s also really easy to make in bulk and freeze so you have something to quickly reheat after a busy day.
Curry – As with chilli, it’s easy to make in bulk and freeze. Depending on your culinary skills or how lazy you’re feeling, you can make a sauce from scratch or get jars of ready-made sauce and have it with whatever meat or vegetables you fancy.
Toasties – Another student classic. I don’t know why, but being toasted makes a sandwich much more exciting. You can get a decent sandwich toaster for around £20 and given the amount of use I get from mine I’d say it’s a worthwhile investment. You can go for classic combinations like cheese and ham, or experiment with more deluxe fillings.
